Super Simple Recipe: Homemade Ice Cream

Being that we have been on a bit of an ice cream kick lately (its been hot and I'm pregnant, in case justification was needed) and making homemade ice cream was on my Summer Bucket List, when I stumbled across this blog post with ice cream recipes that did not require the purchase of yet another kitchen gadget (which means less stuff in my house and money saved), I was all over trying this out!
Ingredients:
2 C heavy whipping cream
14 oz. sweetened condensed milk
1 tsp vanilla (optional)
Directions:
Mix the whipping cream for several minutes, add sweetened condensed milk & vanilla (if you choose).
Pour into freezer safe container, cover and freeze at least 6 hours.
It was delicious and very creamy!!! A simple recipe that was kid friendly and the ingredients were easy to come by. A win in my book!
We pulled it from the freezer the next day and served it over warm brownies which was a perfect combination!

My heart is happy here



Although I love where I live now, I am lucky to live close to my favorite lake & city.

There are corners of that city that will forever hold memories that are dear to me. The memories are vast and varied. And they come flooding back each time I drive back into the city.

Since I no longer have family there, my mom, daughter and I rented a house last week in Duluth, creating new memories together. These memories make my heart happy.



We had big plans of all sorts of things to do and instead spent most of the time at the lake, swimming, jumping, splashing, building sand castles, skipping and collecting rocks- the simple things I live for. The things my little girl and mom appreciate just as much as I do.







We got up way too early to watch a sunrise only to see the fog welcome the day... Ah, but the memories!


















We stopped at the bakery that was right across from where I bought my first house back in college.












We fed (well, the little one chased) the seagulls and watched the ships go through the canal, something that never gets old.










We picnicked and collected pinecones and visited with old friends. We rode a trolley. Several times.



It was a perfect vacation, one of rest and relaxation (which was the goal) the memories will stay with me for a long time.

Picnic nook

We like to eat outside on our patio and do as often as possible. But we don’t have much shade there, so I wanted to clear out a spot in the woods behind our house that we could picnic in. We are lucky to have woods behind our house even though we live right in town. I removed small trees/weeds and planted grass seed, then hung some solar lights.




Sometimes we just bring our picnic blanket out there and eat, but I recently found a table at a garage sale that I repainted and added to the spot.

Ice cream truck!

We have an ice cream truck in our community and it has been a fun experience for us! I can remember tracking down the ice cream truck when I was a child. You can hear the music from quite a distance away and we were able to track down the ice cream truck a couple of weeks ago.












Then our neighbors gave our little girl a portable ice cream truck!!! She was SO excited the night she got it she couldn’t sleep (literally). And in the morning when she realized that the ice cream truck was still in the living room (!!!) she was equally as delighted. Now we can play ice cream truck!!!



We bought some ice cream and started our own (free) delivery to our friends and family.

4th of July weekend

Four days off of work, spent at home. This is so rare for us. And treasured. We thought we would try to host a holiday gathering at our house this year instead of travelling as that gets to be so exhausting. I am still exhausted- in a relaxed, soaked up so much fresh air and sunshine and good memories that it tired me out. A far change from the exhaustion that comes from squeezing every minute from the weekend to be filled with one adventure or another. Both of which I crave. I like the simple, relaxing days at home just as much as the hectic days with projects and activities and adventures. The key is to find the balance in both.
I liked the slower pace of the long weekend; plans made spur of the moment, but I still need to have a plan. I need to have a plan for at least some aspect of things so I feel like I have some control. Not sure this is a great quality or not, but I am happiest when I know people will be eating and sleeping and have clean laundry. And those are all things I can plan for. The preparations for the weekend were simple- our little girl and I picked out some fun new toys (a slip & slide, bubble want for giant bubbles), and I made some food. The anticipation and planning is part of the excitement for me.

We crossed off items from our summer bucket list, like boating and tubing with friends and family and tried out a new restaurant on the lake.








We watched the fireworks, on a blanket by the water and I was so tired I fell asleep during the fireworks. And I missed a great show (so I was told). Sitting on a blanket by the water with my family was just enough to lull me to sleep.
We intended to go to paint pottery, but I took a wrong turn and we drove by an art festival, which lured us in, which was right by the lake, which lured our little girl in…and a new plan was made, without us even realizing it. A better plan.








We collected rocks and went home with several treasures. They are still sitting here in our driveway, a reminder of the fun day.




We ate, and laughed and ate some more. Any good weekend can be summed up with bellies that hurt from laughter and are full of food. We had both.

We pulled out that slip and slide and it was just as fun to watch my little girl (and husband) play as I remember it being when I was a child.

 










We made a town in the driveway, complete with our homes and those of our neighbors, friends and family. This was another unplanned adventure that just kept on. We added a bus, school and our places of employment. At the request of our little girl, I added the teepee that is in her room and I knew she was getting tired when she asked me to draw a bed and promptly laid down on it.




 




I love thinking back to the memories that were made, the moments that made us smile, laugh and think “life is good.” And there were many of those. Our little girl got some great quality time with her grandparents and great-grandparents. And those four days…were well spent.
